Aged for two years in 20% new French oak and 80% four year old American oak
WINEMAKING:
Grapes were crushed and de-stemmed, fermented on skins for 9 days and plunged 3 times a day for maximum extraction of colour and flavour. Fruit from Block 4 was set aside for a long snooze in brand new French oak barrels
AREA:
Southern Adelaide Hills, so close to McLaren Vale we can hear ‘A Day On The Green’
These are our best barrels selected for their intensity of flavour and varietal expression. This release is massive, embarrassingly so… Intense black and blue fruits comfortably dominate the new oak which remains in the background giving this wine great complexity, richness, body and length. This is so good now BUT decanted for an hour. For those with more patience will see improvement beyond 10 years in the cellar.
