Both picked the same day in late February. The shiraz was crushed and de-stemmed, fermented on skins for 7 days and plunged 3 times a day. This extracted maximum colour and flavour. The grenache had a gentler ride, soft pressed, fermented on skins for 8 days and stored in old oak
This is the second release of this wine drawing fruit from our Blewitt Springs vineyard sitting on sandy soil offering excellent drainage and resistance to disease. The vines are 65 and 85 years old respectively but don’t be fooled, these wise old ladies are full of sass producing fruit of uncommon intensity and flavour. This wine is flavoursome showing chocolate, spice and a sweet earthy palate finishing with powdery tannins and length. Enjoy now or cellar up to 10 years.
